Serves 2
Oil
300g thin-cut steak (sliced into thin strips and tossed with 3 tbsp cornflour)
Small head of Broccoli (sliced)
2 Garlic Cloves (sliced)
5cm piece Ginger (finely chopped)
½ Red Chilli
½ bunch Spring Onion or Leek (thinly sliced diagonally)
4 tbsp Soy Sauce mixed with 5 tbsp Sugar
2 Limes (juiced)

Heat 5cm depth of oil in a wok until very hot.
Fry the steak in batches until dark and crisp. Drain and pour off most of the oil and stir-fry the broccoli, garlic, ginger and chilli for 1min.
Tip in the sweetened soy sauce and lime juice, cook for 2mins.
Toss in the beef and spring onions or leek and serve.
I fried cooked noodles in the leftover sauce to serve with the beef.
