Cinnamon Rolls

I’ve been meaning to make these for a while, so on a sunny Saturday afternoon I put some together, they are very quick and easy to make.

Makes 8-10

250g ready made Puff Pastry
60g brown sugar
1-2 Ryvitas
2tsp Cinnamon
2 handfuls of Raisins
Butter
Milk

Heat the oven to 200C / Gas Mark 6. Roll out the puff pastry to 1/2cm thick rectangle and leave to rest.

Meanwhile blitz the ryvitas, sugar and cinnamon together until the crackers are a fine crumble type mix.

Dot butter over the rolled out pastry and spread out. Spoon on generous amounts of the cinnamon mixture until the pastry is evenly covered. Sprinkle plenty of raisins over this.

Have the long end of the pastry going left to right and roll the pastry up, pushing away from you. If you brush the end with milk it should stick to itself.

Using a very sharp knife, slice the roll into 3cm wide spirals and place in a lined baking tin, cut side down.

I used a round cake tin (lined with greaseproof paper) and placed the spirals into this making sure they had space to expand. Once all spirals are in the tin brush with milk and sprinkle any leftover cinnamon mixture on the top of each.

Bake for 20-30mins until golden and the sugar has dissolved.

A delicious treat to have with a cuppa or add custard to make a dessert!
