When Summer is officially here, be prepared for a BBQ with this delicious recipe!
makes 8 kebabs
2 medium courgette
1 orange pepper
1 large red onion
250g low fat halloumi cheese , cut into 16 chunks
16 cherry tomatoes
Baste
1 tbsp olive oil
2 tbsp lemon juice
2 tsp fresh thyme leaves
1 tsp Dijon mustard
Cut all the halloumi and vegetables into decent size chunks and slide onto the kebab sticks.
Mix up the baste ingredients and brush over the kebabs. Leave in the fridge for a few hours or overnight.
BBQ for 10-20mins until they are cooked through. Serve with pitta bread! Yum!
