I wanted an quick, easy to make curry dish, full of goodness. So here it is…
Serves 2

1 Onion (finely chopped)
1/2 Red Pepper (chopped)
Oil
1 tsp Turmeric
2 Garlic Cloves (crushed)
2 tsp Grated Ginger
1 tsp Dried Crushed Red Chilli
400g tin Chopped Tomatoes
1/2 Courgette (chopped)
200g Prawns

Fry the onion and pepper with 1tbsp of oil for 5 mins until soft, add turmeric, garlic, ginger and red chilli and keep cooking for a few minutes until it thickens to a paste.
Add the tomatoes and courgette, simmer for 10 mins, add some water if you need to. Stir in the prawns and cook until they turn opaque if they are raw or until heated through if they are already cooked.
Delicious served with rice or naan, top with a dollop of yogurt.
