Sausage & Potato Gratin

A delicious filling dinner – Serves 2

4-5 medium potatoes (peeled)
1 leek (thinly sliced)
1/4 cauliflower (chopped very small)
1 Clove Garlic (crushed)
200ml Single Cream
Chives
25g Parmesan (grated)
25g Cheese (Brie / Camembert / Stilton – cut into small pieces)

Slice potatoes into 1/2cm thick pieces, boil for no more than 5mins.

Fry cauliflower and leek gently for a few mins in some oil. Butter a shallow dish and sprinkle in the vegetables. Drain potatoes and tip over the top. Mix up the vegetables so they are evenly spread.

Fry the garlic in some oil, take off the heat and pour in the cream, stirring all the time. Return to the heat and add the cheeses to melt (not the parmesan).

Once the cream mixture in heated through, pour it over the poato and vegetable mix and sprinkle parmesan on top. Season with salt and pepper.

Bake at 200C / Gas 7 for 30mins. You can add grated cheddar and chives to the top towards the end.

Meanwhile grill some sausages with some rosemary to accompany the gratin.
