I found an easy sugar free banana bread recipe, so I can feed my little boy a healthy cake on a regular basis for his pudding! It’s lovely with custard!
125g plain wholemeal flour
1½ tsp baking powder
2 tsp ground cinnamon
75g raisins
50g butter, (melted)
2 tsp vanilla essence
1 egg
1 tbsp milk
3-4 ripe mashed bananas(depending on their size)

Heat the oven to 180C/gas mark 4. Grease and line a loaf tin with baking paper.
Sieve the flour, baking powder and cinnamon into a bowl then add raisins and mix with a wooden spoon. There may be wholemeal flakes left in the sieve, so just tip these in as well.
Mix the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl, mix with a whisk or fork.
Pour the wet banana mixture into the dry flour mixture and combine thoroughly with a wooden spoon.
Pour the cake mixture into the prepared tin and bake for 30-40mins or until a skewer comes out clean. Remove from the oven and allow to cool in the tin for 10mins then turn out.
