Sugar & butter free fruit flapjacks

My 18 month old Son LOVES flapjacks and I’ve spent a long time looking for and adapting sugar free fruit flapjack recipes, my most recent batch seem to be the best, so I thought I’d share my recipe.

makes 16 squares

1 Apple

1 Pear

1 tsp Cinnamon

1 cup Raisins

2 cups Oats

 

Cut the fruit up into small chunks and stew until it becomes a mush, about 5mins. Add the cinnamon. Stir through the raisins and leave them to soak up the juice for 3mins, this makes them plump and soft, it also stops them burning when you bake the flapjacks.

Stir through the oats until completely combined. Put mixture into a lined baking tin and smooth down.

Bake for 30mins at 160°C / Gas Mark 3. Leave to cool in tin for 10mins and cut into squares.

You can use any fruit that can be stewed, but I have found either 2 apples or an apple and a pear work best, especially as pears tend to produce more juice when stewed and you don’t want the mixture to be too wet.
