Chocolate & Banana Muffins

As I have always taken home-made cakes into work for my birthday, I couldn’t let such a tradition fade out in 2013. So I baked some chocolate & banana muffins, which were gratefully accepted!

Makes 12

photo100g Butter (softened)
175g Caster Sugar
225g Self-raising Flour
1 tsp Baking Powder
2 Eggs (beaten)
3 tbsp Milk
2 very ripe Bananas (mashed)
75g Dark Chocolate Chips

Preheat the oven to 180C/160C fan/gas 4. Line a 12-hole muffin tin with paper cases.

Beat together the butter and sugar, sift in the flour and baking powder and combine, then stir in the eggs, milk and bananas into the bowl and beat together until combined and smooth. Mix in the chocolate chips.

Spoon into the paper cases and bake for about 30-40 minutes until well risen, golden brown and shrinking away from the cases. Remove the cases from the tin and set aside to cool.
