Serves 4
500g Penne
2 tbsp Olive Oil
1 Red Onion (chopped)
2 Cloves Garlic
1 Courgette
Handful of Cherry Tomatoes
Splash Lemon Juice
Grated Parmesan
Basil
Cook the pasta for about 10mins, meanwhile heat the oil very gently (optional – add chilli), cook garlic and onions until soft. Then add the courgette and cherry tomatoes, turn up the heat and cook until the tomatoes are blistered.
Drain the pasta and tip into a large bowl. Toss with the tomato mix and add lemon juice.
Serve in pasta bowls with grated parmesan and basil.
NB The photo shows Chorizo, Mushroom & Pepper which are also good substitutes / additions and can be added at the same time as the other vegetables.
