Egg Fried Rice

I whipped up a delightful dish of egg fried rice from scratch the other day, completely made up and it tastes good too! So I thought I’d share the recipe.

Serves 2

Oil
1 Carrot (grated)
1 thumb sized piece Ginger (grated)
1 clove Garlic (chopped)
1/2 Green Chilli (chopped finely)
1 small Onion (chopped)
1/2 small Broccoli (chopped long and thin)
Splash Sesame Oil
Splash Soy Sauce
100g Peas
150g Prawns
150g Rice
2 Eggs (beaten)

Boil the rice until just cooked. Meanwhile, stir fry all the vegetables in oil for 5mins so they are still crunchy.

Then stir through sesame oil, soy sauce and peas, add prawns and cook for 3-5mins.

Once the rice is cooked, add it to the vegetable mix and take off the heat. Thoroughly stir through the beaten eggs, these will cook using the heat of the veggie rice mix as you don’t want them to scramble.

Serve with a sprinkling of dried crushed chilli as an added extra!
