Marinated Lamb Kebabs

We briefly saw some sunshine, which coincided with a family visit, so we had a BBQ and I got the chance to make these delicious kebabs.

Makes 10 kebabs

500g Lamb (cut into 2.5cm cubes)
2 Red Onions (quartered)
2 Peppers (cut into 2.5cm pieces)
1 Aubergine (sliced thinly)

Marinade
2 tbsp Smoked Paprika
4 Cloves
1 tsp Cumin Seeds
4 tsp Coriander Seeds
6 pieces of fresh Rosemary (remove leaves & chop finely)
Sea Salt & Ground Black Pepper
Olive Oil

Use a pestle and mortar to crush up all the spices until fine, then mix with the oil to make a thick marinade paste. Put the lamb pieces & rosemary into a bowl and cover with the marinade. Let them sit there for half an hour to an hour. I left the mixture overnight in the fridge.

Use skewers to put together the kebabs, alternating lamb, aubergine, red onion and peppers.

Grill for around 5-10 mins, turning regularly. Allow to rest for a few minutes – then chomp away!!

UPDATE: I have since made these kebabs with white onion, pepper and courgette, which is another delicious combination!
