Yay to warmer weather and the return to eating salad for lunch! Yum!
Everyone knows how to throw a salad together, so i’m going to list some ideas / combinations rather than patronise the masses with recipes on how to make a salad!
Breakfast Salad:
Spinach
Mixed Beans – Black Eyed, Cannellini Beans, Flageolet Beans, Pinto Beans, Borlotti Beans, Kidney Beans
Tomatoes
Boiled Egg
Chorizo
Croutons
Feta & Courgette Salad:
Rocket
Feta
Courgette (grated)
Carrot (grated)
Avocado
Olives
Nicoise Salad:
New Potatoes
Boiled Egg
Lettuce
Olive Oil
Tomatoes
Balsamic Vinegar
Basil
Tuna
Lemon
Olives
Garlic
Caesar Salad Dressing:
1 large Egg
1 large Garlic clove, peeled and crushed
1 tbsp Lemon/Lime juice
2 tsp Worcestershire sauce
3 tbsp Olive Oil
Black Pepper
25g/1oz Parmesan Cheese, coarsely grated
I just put it all in the chopper / blender, then keep it in a jar in the fridge and shake before each use – serve with croutons.
