A dedication to my beautiful friend Anna…a few of my friends rave about my banana bread (which until recently I didn’t know had such notoriety amongst them), alongside promising to teach Anna to bake this yummy bready cake, I am also posting the recipe here as a reference for her and everyone else!

75g butter (softened)
110g sugar
225g plain flour
2 tsp baking powder
2 eggs (beaten)
2-4 ripe bananas – depending on size (mashed)
handful of raisins
Heat the oven to 180C/gas 4. Beat the butter and sugar together. Sieve flour and baking powder and stir, then add the eggs and banana together. Stir in the raisins and spoon into a lined and buttered loaf tin.
Bake for an hour until golden or until a skewer comes out clean.
