Now Christmas is behind us, i wanted to share a gift we gave without spoiling the surprise!
After a bumper harvest of tomatoes and courgettes during our first year of gardening, we produced some chutney which we gave away in some lovely kilner jars – a food gift that keeps on giving!
Courgette Chutney – make 500g
1 onion (chopped)
250g tomatoes (chopped)
250g courgettes (diced)
150ml white wine vinegar
1 apple (peeled and diced)
125g brown sugar
1/2 tbsp mustard seeds
thumb-sized piece root ginger (grated)
2 garlic clove (crushed)
Put all the ingredients in a large pan. Bring slowly to a simmer, stir to stop the mixture sticking.Simmer uncovered for 2 hours until dark and thick consistency.
Pour into sterilised jars and leave for 2-3 weeks before eating.
