Potato Rosti

I have finally found a really good rosti recipe, which my littlen loves too! These hold together and cook really well, i think time in the fridge really helps.

330 g Desirée potatoes, peeled
2 spring onions, finely sliced
sea salt
freshly ground black pepper
1 heaped tablespoon plain flour
1 small knob butter

 

Boil the potatoes until just cooked. Drain well and when cool enough to handle grate into a mixing bowl. Add spring onions, seasoning, flour and half the butter and mix well. Divide into 4 equal balls and push into flat rounds. Leave covered in the fridge overnight or for as long as possible.

Heat a non-stick frying pan over a moderate heat and add the rest of the butter. Gently fry the potato cakes for 2-3mins each side, until light brown and heated through. Keep warm.

These are delicious, good for breakfast or as a side dish with dinner.
