Paprika & Garlic Potatoes

We had some friends round for lunch and these potatoes when down a storm. We enjoyed them so much, I made them again for dinner a few days later, yum!

Serves 2

3 medium-sized Red Potatoes
2 cloves garlic (crushed)
1tsp Sea Salt
1tsp Paprika
1tbsp Flour
Olive Oil

Heat oven to gas mark 5 / 190C. Place shallow baking tray with layer of oil into oven.

Chop potatoes into wedges/chunks and place into saucepan of boiling salty water, cover and boil for 5mins. Drain potatoes and leave in pan.

Add garlic, salt, paprika and flour, put lid on pan and shake. Then add oil and shake again, making sure all potatoes are evenly covered.

Tip onto tray that was preheated in oven and spread out.

Roast on top oven shelf for about an hour, until crispy and golden.
