Jamie’s Flapjacks

I often tease my friend Jamie for his love of flapjacks, so decided I should actually make him some….and dedicate a post to him!

Makes 12

50g Butter
3 tbsp Golden Syrup
85g Soft Brown Sugar
1 Banana (mashed)
140g Porridge Oats
½ tsp Ground Cinnamon
50g Desiccated Coconut
3-4 tbsp Mixed Seeds (linseeds, sesame, pumpkin, sunflower)
Handful of Raisins.

Heat the oven to 160C / gas 3. Butter and line a 22cm square baking tin.

Melt the butter, syrup and sugar in a pan over a low heat, then add mashed banana and stir well.

Pour the mixture over the oats, cinnamon, coconut, seeds and raisins, thoroughly mix and pour into tin.

Bake for 35 mins, until golden. Leave to cool for 5 mins, then cut into slices.
