Yay for Pancake Day!

Tomorrow – Tuesday 8th March is Shrove Tuesday. So I thought I would share with you my pancake mixture recipe, it’s very easy to make, so enjoy!

Makes approx 8

110g Plain Flour (sifted)
Pinch Salt
2 Eggs (beaten)
200ml Milk
75ml Water
50g Butter

Sieve flour and salt into a large mixing bowl, make a well in the centre and tip beaten eggs into it. Whisk the mixture well to incorporate all the flour from the edges.

Mix together the milk and water and whisk into flour and egg mixture a small amount at a time. Whisk until smooth and lumps have disappeared. Set aside for 30mins.

Melt the butter in a frying pan then spoon 2 tbsp of butter into the batter mix and whisk again before cooking. Pour rest of butter into a separate bowl and use kitchen roll to wipe it round the pan between cooking each pancake.

Heat the frying pan to make it really hot, turn the hob down to a medium heat. Then add a ladle of the batter into the centre of the pan and tip it side to side to get an even coverage of batter all round the pan. After a minute or so flip the pancake to the other side for about 30secs, the pancake should be golden.

You can serve straight away or in a very low heat oven keep the stack of pancakes warm, by placing on a baking tray with greaseproof paper between each pancake to stop them sticking together.
